Stratta’s plans to transform “Corsa Cucina” into his latest signature restaurant simply called “Strata” include not only a carefully selected menu and decoration, but also a completely renewed and relaxing atmosphere and ambience. “Stratta” promises to offer the best regional Italian cooking in Las Vegas, focusing on authentic Italian flavors, recipes and traditional dishes as well as Chef Stratta’s original Mediterranean dishes.

Chef Stratta has worked for Steve Wynn since 1998, when he was named executive chef of the Renoir restaurant at The Mirage hotel and casino, getting the Mobil Travel Guide's highest qualification only six months after opening. In 2005 Stratta opened his second restaurant eponymously called “Alex” at Wynn Las Vegas, which also received the highest rating from the Mobil Travel Guide, 5 diamonds from the AAA Restaurant Ratings, and 2 stars from the Michelin Guide.

Chef Stratta said that his restaurant will many of the ingredients used at ”Alex”, including olive oils from Tuscany and Liguria and the San Marzano pomodori, a special type of tomatoes imported from Italy. While some of the dishes included into the menu may remind the complexity you can expect at “Alex”, the Chef Stratta said that that the menu at his new creation was crafted having in mind people who want to experience simplest flavors and a more traditional approach.

“The food at Stratta very soulful and very representative of what I consider to be the best of regional Italian cooking. We are applying the same spirit and the same cooking techniques that we use at restaurant Alex, but in a very approachable way that focuses on flavor and tradition. Alex is uptown and Stratta is downtown, it’s a bustling restaurant with a totally different vibe. I want Stratta to be simply about good food and fun” said Chef Stratta.
