The grand opening of Steve
Wynn’s new signature Las Vegas
hotel in December 2008 will also mark the debut of one of the best compilations
of restaurants in town. Contiguous to Wynn Las Vegas, Encore will feature some
of the most celebrated culinary talents in the country, including chef Theo Schoenegger, master chef Jet Tila, chef
Marc Poidevin, chef Mark LoRusso and chef Kim Canteenwalla.

Former star
chef at the four-star Patina restaurant in Los Angeles,
Chef Theo Schoenegger will open his first restaurant in Las Vegas, called Theo's. Chef Schoenegger has
gained recognition for his simple but modern approach of traditional Italian
cuisine and innovative menu accentuated by the use of fresh and seasonal
ingredients. Asian food expert Chef Jet Tila will open “Wazuzu”, an informal
but exciting restaurant that features a menu with the best of the Southeast
Asian cuisine, offering Thai, Chinese, Japanese, Vietnamese, Korean and Indian
recipes.
Former Wynn's
executive chef of catering and special events and executive chef of Le Cirque
at the Bellagio, Marc Poidevin, will contribute to Encore’s gastronomic
selection with a self named restaurant. “Marc Poidevin” is a French themed
steakhouse and seafood restaurant with an emphasis on the finest seasonal ingredients.
The restaurant will also introduce an innovative concept in the Las Vegas restaurant business,
“Marc Poidevin” decoration, furniture and walls were carefully selected and
designed to transform the place every night as seats, tables, chandeliers and
walls move to provide customers with a “new” experience every time they pass
through the door.
Another
great chef that will join Encore’s team of culinary experts is Chef Mark
LoRusso, who will introduce the “Botero Steak”, a new restaurant inspired by
the Colombian artist Fernando Botero. LoRusso's restaurant will feature a
modern steakhouse menu in a sensual and stylish location right beside the famous
XS nightclub. Finally, Chef Kim Canteenwalla will delight guests with the “Society
Cafe Encore”, a new American restaurant with an unconventional concept and a
ground braking menu that features Chef Canteenwalla’s reinterpretation of some traditional
American dishes with a modern and superb delicacy.
